Yesterday I was at home, doing the things. laundry, dishes, vacuuming, etc — when all of a sudden I realized I was starving. Sometimes I forget to eat when I’m busy. It’s silly but it happens.
One of my favorite ways to have scrambled egg is with feta and spinach, and we just happened to have both in the fridge. But the stove top was disassembled because I was in the middle of cleaning it. Because we made fish and chips last night. Some things are not worth it. Just go to Long John Silver’s and leave the mess with them!
I decided to give microwaving the eggs a shot. Not usually ideal, but better than finishing the stove top before eating my lunch! There’s not much “recipe” to this chicken and egg bowl, but I’ll explain what I did. Because it was fantastic! And an explosion of protein!
This is a pretty good sized microwave safe cereal bowl. I sprayed it with some oil, then cracked 3 eggs into it and a couple of glops of whipped cottage cheese*. (Each glop is probably a little more than a tablespoon.). Mixed this up together with a fork, then added some fresh spinach, torn into smaller pieces and a decent dump of crumbled feta. Remember — spinach always looks like it’s about to take over the world and then when it’s cooked it all but disappears, so put in way more than you are thinking. And a little feta goes a long way so don’t go crazy unless you love it. I love it, so went a little crazy!
Added a touch of salt — the cottage cheese and feta are already pretty salty– and a twist or two of pepper then microwaved it on high in 30 second intervals, stirring in between until it was done. This was the point when I remembered I had some leftover cooked chicken breast pieces in the fridge. Chopped those into bite size, microwaved for a little while, then added it into the bowl.
This chicken and egg bowl turned out so amazing! It was super filling and I almost couldn’t even finish it all! Great tangy, salty flavor comes from the cottage cheese and feta. I think you could easily add bell peppers or mushrooms, or swap out the chicken for whatever you happen to have available — bacon, sausage, turkey all sound good to me. If you’re watching out for fat, you could easily use egg whites instead of the whole egg.
When I entered the ingredients into My Fitness Pal I was amazed at the macros. Do you see that?! Over 50 grams of protein — that’s a good chunk of my protein goal for the day.

Keep in mind that the amounts I provide are not hard and fast — this bowl is tremendously flexible and there’s no need to measure anything. Just a shake of this, glop of that and you will be fine! * I have been whipping the entire container of cottage cheese in the blender, then returning it to the original container to store. It is so much easier to use this way – especially if you find the clumps off-putting like I do.
