A protein packed meal or snack for any time of the day!

Chicken and Egg Bowl

This quick bowl is perfect for any meal and packed with protein and all the good stuff! Feel free to be loose with the measurements!

Ingredients
  

  • 3 eggs (you can substitute all or some with egg whites)
  • 2-4 Tbsp whipped cottage cheese
  • 1 cup fresh spinach leaves, torn
  • 1-2 Tbsp crumbled feta
  • ½ cup cooked chicken breast, cut into bites (or any other meat you prefer)
  • salt, pepper

Instructions
 

  • Spray a medium sized microwavable bowl with cooking spray.
  • Add the eggs and cottage cheese and whip with a fork until well blended. Add spinach, feta and seasonings, mix well.
  • Microwave on high in 30 second intervals, stirring with a fork in between. Total cook time should be about 2 minutes, or until you reach your preferred doneness.
  • Microwave the chicken bites for 30-45 seconds until warmed, add to bowl, (alternately you could put the chicken in the bowl for the final 30-60 seconds of cooking)

Notes

I hesitate to even call this a recipe. I don’t measure anything, just add a glop of this, a sprinkle of that and keep on until it looks delicious. It’s very adaptable and forgiving so it’s easy to use whatever items you have handy. Add bell peppers, mushrooms or any other vegetables you like. Trade out the chicken for bacon, sausage or ground beef.  Or do it all and have a killer omelet bowl.
