Cottage Cheese Banana Pancakes

High in protein and fiber these fluffy cakes use cottage cheese — so you can be trendy, too!

Ingredients
  

  • 2 cups old fashioned oats
  • 1 medium sized ripe banana
  • 1 cup low fat cottage cheese (blended — see notes)
  • 1 T baking powder
  • ¼ cup peanut butter powder (PB Fit or PB2)
  • ¼-½ cup milk (I use the 2% Fairlife for extra protein and no lactose)
  • 1 T vanilla
  • ½ tsp salt

Instructions
 

  • Measure oats and pour into a blender container. Pulse several times until they become powdered.
  • Add remaining ingredients to blender and pulse several times until well mixed.
  • Heat griddle to med heat and coat with butter or non stick spray. Pour batter on griddle making 3" wide pancakes. Cook until browned on both sides and done in the middle.
  • Serve with chopped fruit, honey, maple syrup, nuts, peanut butter — whatever you like!

Notes

Measure the oats before blending into powder.  I blended the entire container of cottage cheese when I brought it home and then poured it back into the container to use. However, if you haven’t done this, you can either blend the cottage cheese first, then dry the blender container and proceed with the oats, or put the cottage cheese in lumpy and run the blender a little longer after all ingredients are added. I’d probably do it the second way because it sounds easier!  (Since I measured mine after blending I would add about 1/4c extra cottage cheese if you blend after measuring)

This pancake recipe goes together quick in the blender. Start by blending your oats into a powder (see notes) then add everything else. Pulse a few times and you’re done. My batter was very thick — you can adjust it to your preference by adding a little more milk. I also decided to add a sprinkling of cinnamon. That’s almost never a mistake!

I love this cast iron griddle. It spans 2 burners on my gas stove and has been used daily for over a decade. There is a grill pattern on the flip side that I use occasionally, but I tend to fill the house up with smoke and start the odd fire when I try to “grill” inside. Best to just avoid that altogether!

Look how lovely these little guys are. So light and fluffy, with no flour or sugar! Amazing!
