I hesitate to even call this a recipe. I don't measure anything, just add a glop of this, a sprinkle of that and keep on until it looks delicious. It's very adaptable and forgiving so it's easy to use whatever items you have handy. Add bell peppers, mushrooms or any other vegetables you like. Trade out the chicken for bacon, sausage or ground beef. Or do it all and have a killer omelet bowl.
