Summer Camp Menu: Outback Chicken with Roasted Red Potatoes and Garlic Green Beans

Outback Chicken breast with roasted red potatoes and garlic green beans

This is a delicious and simple meal that is universally loved. Especially the potatoes!

Ingredients
  

  • 50 boneless skinless chicken breasts, sliced in half and pounded to about 1/2" thickness (this will be about 30-35lbs, cut larger ones in 3 pieces if necessary)
  • 1 x 20oz bag of bacon pieces (or you can cook 4 packages of bacon, or use leftovers from a previous meal)
  • 1 x 5lb bag shredded cheddar cheese (you'll probably have a little extra)
  • 3 x 24 oz bottles of honey mustard salad dressing/dip
  • 20 lbs red potatoes, washed and cubed
  • olive oil, salt, pepper, garlic, rosemary
  • 13 x 16oz bags frozen cut green beans
  • 2 onions, chopped

Instructions
 

  • For the Chicken:
    Preheat oven to 375℉.
  • Cut chicken breasts in half and pound, covered in plastic wrap, with a mallet or rolling pin until they're about 1/2" thick. Sprinkle with salt and pepper.
  • In a large skillet, sear chicken in oil or butter for 2-3 minutes per side. These will not be cooked through, just getting a little color on them and trapping the juices inside.
  • Spread seared breast on baking trays lined with foil or parchment. Top with cheddar and bacon bits.
  • Bake for about 20 minutes until done. Remove from the oven and drizzle with honey mustard before serving.
  • For the Potatoes:
    Wash and cube the potatoes. Place in 2-3 greased full steam pans. Drizzle with olive oil and sprinkle seasonings over.
  • Roast in 400℉ oven for 25-30 minutes until potatoes are tender.
  • For the Green Beans:
    Defrost frozen beans in the microwave. Layer in 2 greased full steam pans. Add chopped onion. Drizzle with olive oil (or reserved bacon grease), sprinkle with garlic and salt.
  • Roast at 400℉ for 20-25 minutes until desired doneness is reached.

Notes

This is a great meal!  It may seem like a lot of steps, but it’s really pretty simple. Have your kitchen helpers do an assembly line to get all of the chicken browned and topped. Our campers have really loved these roasted potatoes, but if you happen to have extras they’re also great for breakfast.
