Taco Bar

This is a great lunch option for your campers. Supply whatever toppings, condiments, and tortilla variation you like. It will be great however you do it!

Ingredients
  

  • 1 cup chili powder
  • ½ cup cumin
  • cup salt
  • cup black pepper
  • 3 Tbsp smoked paprika
  • 2 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1-2 Tbsp crushed red pepper flakes (adjust for your preferred heat level)
  • 2 Tbsp dried oregano
  • 15 lbs ground chuck (80/20)
  • 2 x 40-ct flour tortillas (or corn, or a mix)
  • 2 x 23.5oz bags of tortilla chips (I prefer the On the Border brand from Sam's)
  • 1 x 47oz jar salsa (I prefer the medium On the Border salsa from Sam's)
  • 1 x 5lb bag shredded cheese
  • 4 x 16 oz bags shredded lettuce
  • 12 tomatoes, diced
  • 2 x 15oz container of guacamole
  • 1 x 3lb container of sour cream

Instructions
 

  • In a large pot, brown and crumble the ground beef. Add in seasonings and 1 cup of water. Simmer until ready to serve.
  • Prepare all toppings and set out for serving.

Notes

This taco meal is very versatile and allows your campers to build their perfect taco or salad. You can easily substitute packaged taco seasoning to make it easier! If you have more adventurous campers, include olives, onions, jalapeños and whatever else you can think of to the list of toppings. Add beans and rice if you feel like the tacos alone won’t be filling enough.
